The foie gras produced on Sousa''s farm in Extremadura, Spain, is known for being raised around an abundance of food sources that grow on the property, from figs to acorns, and various naturally occurring herbs such as the seeds from the yellow bush lupine which gives his foie gras the characteristically yellow color of high quality foie gras that is usually produced through the gavage process which uses corn.
This is without any doubt a culinary, cultural and animal loving contradiction: sustainable foie gras.
